We Be Bloggin'...

I meant to start off my new blog with this post, but I hadn't gotten around to it yet, and I really wanted to get that recipe up yesterday! So... we'll do it a little backwards, what the heck?!? :)

I used to post blogs all the time on my MySpace page, ya know, when MySpace was still cool? Haha... I mostly did it whenever my husband was deployed, it was my way of venting, and sharing certain things with friends and family. Then for some reason, I stopped?

Recently, I've been following the blog of a very strong lady that I went to High School with, and she was inspiring, I could tell her blogs were fun, and in a way therapeutic. So I decided to attempt to start blogging again, (with the hundreds of other things I have on my plate, haha).

The Carrillo family has been through quiet a bit, some of you know what we've been through, some of you THINK you know what we've been through, and some of you will never know... but by the grace of God we made it through and are here today... stronger, smarter, thankful, & very blessed! We are finally in good place in life, and great things are about to happen for our family... and this is where we plan to share it with y'all!

Yummy Beef & Broccoli

My hubby and I have a "Biggest Loser" cook book that we cook out of often and this weekend I made the Beef & Broccoli out of it for the first time. It was YUMMY, HEALTHY, & EASY... so I thought I'd share it with y'all...


SZECHUAN BEEF AND BROCCOLI
1 lb of chuck steak, sliced against the grain, into thin strips (1/4")
1 tsp. garlic powder
Salt to taste
Ground black pepper, to taste
Olive oil spray
1 (14 oz) bag frozen broccoli
1 Tblsp. freshly minced garlic
2 tsp. toasted sesame oil
1/4 cup bottled Szechuan stir-fry sauce 

In a large bowl, combine the steak, garlic powder, salt and pepper and toss until will combined.
Place a large non-stick skillet or nonstick wok over high heat. When hot, mist it with the olive oil spray. Add the broccoli and garlic and cook, stirring, for 4 - 6 minutes, or until the garlic softens and the broccoli is heated through and crisp tender, being careful not to burn the garlic. Transfer to a large bowl and cover to keep warm.
Return the pan to high heat and add 2 tsp of the sesame oil. When hot, add the steak in a single layer and cook, stirring occasionally, until lightly browned on both sides, 2 - 3 minutes. Return the veggies to the pan with the meat, and remove from the heat. Add the Szechuan stir fry sauce and mix well to coat. Divide among 4 bowls and serve.

I also made steamed white rice to serve as a side with it...
